Gluten-free potato soup w/ veggies (easy, creamy, light, & healthy) - Delicious Nutritious Food (1)

When the weather gets cold, I crave soups of all kinds. So, soup is constantly cooking in my kitchen during the fall and winter seasons. Likewise, cool weather during the spring season calls for nothing but a bowl of hot homemade hearty, healthy potato soup to keep you warm and full for the day. I did not use flour.

When making a soup, besides keeping the soup base ingredients like broths or stocks, grains, or starchy vegetables to thicken up the soup, you can use any vegetables, proteins, legumes, nuts, fats, dairy products, spices, and herbs in the soup. And guess what, you can even make soup with fruits!

To make this gluten-free potato soup recipe lighter and healthier without sacrificing the taste, I used yogurt and some cheddar cheese instead of cream and a lot of fresh and frozen vegetables.

What potato is best for soup?

It depends on the type of soups you are making. If you want the potatoes to retain their shape after cooking in the soup, then use waxy potatoes such as red and Yukon gold potatoes.

However, baking potatoes such as russet potatoes are high in starch and a great choice for making creamy and thick soups.

How to thicken gluten-free potato soup?

Always add a thickening agent gradually to avoid lumps.

  • Use potatoes with high starch and mash them into soup.
  • Cornstarch and rice flour are other options.
  • Use other pureed vegetables such as winter squash, carrots, or corn.

What spices go in potato soup?

You can season potato soup with a variety of spices and herbs you like the most. But, the common ones are salt, pepper, garlic, online, and parsley (or thyme, chive, rosemary)

Should you peel potatoes for this gluten-free potato soup?

It depends on personal preference and both types are delicious. Soup made with peeled potatoes has a smooth texture and appearance and a much milder flavor.

On the other hand, a soup made with unpeeled potatoes has a rustic texture, but it has more nutritional value and is quick to make.
