This weight watchers chicken taco soup recipe is healthy and hearty. This version is a slow cooker chicken taco soup, so it is incredibly simple to make.

The version of the recipe I made is 1 weight watcher point for 4 servings–so if you are only having 1 serving it is a zero point weight watchers soup.

In the variations section below I will show you how you can reduce the ww points even further (Hint: use my zero point ww tomato sauce).

Since I know a lot of my readers use classic weight watcher programs, I have included the weight watchers points for a few of the older ww plans. (You can find the point totals for personal points plan, the points plus plan, as well as the blue, purple and green plans in the recipe card at the bottom of the page). The easiest way to get the most up-to-date info on ww points is just plug the recipe into your ww app.

Tortilla chips and shredded cheese are the perfect way to top a delicious taco soup. And since this is a zero point weight watchers recipes–you can afford to splurge a little!

Ingredients

  • 1 lb lean ground chicken weighed raw
  • 3.5 cups chicken broth
  • 1.5 cups tomato sauce (use my zero point ww tomato sauce to keep points as low as possible)
  • 28 oz can diced tomatoes
  • 1 15 oz can black beans
  • ½ cup chopped red bell peppers
  • ½ cup chopped green bell peppers
  • 1 cup diced red onion
  • 1 cup frozen corn
  • 2 garlic cloves diced
  • 30 g package taco seasoning (see picture below for my brand)
  • 1 tsp onion powder
  • Dash of salt & pepper

Step by Step process for making recipe

  1. If you are using my zero point homemade tomato sauce, prepare the sauce ahead of time.
  2. Cook the lean ground chicken in a frying pan on the stove top and drain any fat.
  3. Place the crockpot on high and add in the tomato sauce, diced tomatoes, and chicken broth.
  4. Stir in the cooked chicken, diced veggies, black beans, garlic, and corn.
  5. Mix in the taco seasoning, onion powder, salt, and pepper.
  6. Let cook on high for 4 hours or low 7-8 hours.
  7. Optional: top with reduced fat cheese, tortilla chips or tortilla strips, and a sliced jalapeno for some extra heat.

Variations/Substitutions

One of my favorite things about this recipe is that it is incredibly versatile. I encourage you to make it your own by swapping out ingredients to fit your taste!

  • Zero-point weight watcherssoup variation :the only ingredient with points is the taco seasoning pack which has 3SP total. So 1 serving is zero points, 4 servings would be 1SP. If you want the entire pot of chicken taco soup to be zero points, you can make your own taco seasoning. Here is a wonderful weight watcher friendly taco seasoning recipe from realadvicegal.com
  • Substitute the beans: If you are a long-time reader, you will know that beans are not my favorite. So, when I make this for myself I just skip the beans all together, and it still tastes great. You can definitely swap out the black beans for kidney beans, or pinto beans. Either should pair nicely with soup.
  • Substitute your favorite protein:
      • Using lean ground chicken makes this recipe really healthy while still being a hearty soup. But if you are looking for a more classic taco

        soup–you can substitute lean ground beef. Just make sure to update your ww app to get the most up-to-date points if you use beef.

      • One of my readers noted that substituting lean ground turkey is another option that will keep the recipe as low as possible in points (thanks Rosalie!).
      • And another one of my readers also pointed out you can make this recipe vegetarian by replacing the chicken with veggie crumbles (thanks Sharmaine!)
  • Easy taco soup recipe: if you don’t have time to make my zero point veggie tomato sauce, the easiest way to make the recipe is to substitute store bought tomato sauce. Just make sure to input into your ww app to double check the points.
  • Adding heat to this easy soup recipe: If you want a little extra spice you can cut up and throw your favorite green chilies right to the crock pot. Jalapeno peppers work well, and serrano peppers are great if you want something a little spicier. Just remember to de-seed the chilis first.
  • Ranch dressing taco soup: It’s simple to turn this recipe into a weight watchers friendly chicken taco ranch dressing recipe. Simply add your favorite ranch dressing mix to the crock pot in equal proportion to the taco seasoning. So in this case you’d want to add 30g of ranch dressing mix. This will add additional ww points, so just make sure to check the total in your ww app.

Tips and Tricks

  • This recipe makes 12 1-cup servings. This soup freezes well. So you can make it ahead of time and simply reheat it for those busy weeknight meals.
  • Don’t skip the step where you brown the meat. Browning the chicken seals in the juices and prevents it from drying out as you cook it in the slow cooker.

This is a low points weight watchers chicken taco soup. The primary version I made here has 1 point for every 4 servings.

In the variations section above, I have also included a version of this healthy soup which has zero points.

Ingredients

  • 1 lb ground chicken, weighed raw
  • 3.5 cups chicken broth
  • 1.5 cups tomato sauce *I used my zero point veggie tomato sauce, recipe linked in opening write up
  • 28 oz can diced tomatoes
  • 15 oz can black beans
  • 1/2 cup diced green bell peppers
  • 1/2 cup diced red bell peppers
  • 1 cup diced red onion
  • 1 cup frozen corn
  • 2 garlic cloves, diced
  • 30 g package taco seasoning *see picture for my brand

Instructions
