WW Taco Soup Ingredients

This soup is very flexible – you can add veggies to it and you’ll just make it more hearty. I only used a half can of beans as they have a lot of points. This keeps the points low!

  • Protein – Lean Ground Turkey Breast is the lowest WW point protein you can use. If you swap out ground chicken, ground beef or ground pork – that will add to the calories & points
  • Canned/Frozen Veggies– diced tomatoes, whole kernel corn, diced green chiles, kidney beans
  • Fresh Veggies – bell pepper, sweet onion
  • Seasonings –taco seasoning, ranch seasoning
  • Toppings– nonfat Greek yogurt, tortilla strips, diced green onions

Is this a healthy Taco Soup?

Yes! Really – it’s all about the choices you make in regards to the ingredients. Make those healthy swaps but keep all the flavor in! And – there’s no cheese – the other toppings are healthier and just as tasty!

How do you make Weight Watchers Taco Soup recipe?

  • Heat a large soup pot or dutch oven to medium high heat and add 1/4 cup water, ground turkey, onion and bell pepper
  • Brown turkey mixture to cook through (no need for oil if you use a little water!)
  • Once cooked through, add taco and ranch seasonings and stir
  • Add tomatoes, corn, chiles and beans (save the rest of the corn & beans for other recipes!) Do not drain tomatoes or beans!
    • Side note on the green chiles – I am not a big spice fan and used 1/2 small can and it’s on the spicy side. Next time I would just use 1 spoonful instead.
  • Add 1 cup water
  • Place lid on pot, lower to medium heat and simmer for 15-20 minutes
  • Top with Greek yogurt, tortilla strips & green onions

What seasonings could be added to taco soup?

I like going with taco & ranch seasoning but you can jazz it up with garlic, cumin, chili powder or onion powder.

Can Taco Soup be made ahead of time?

Yes – most definitely! This healthy dish is the perfect recipe for a quick dinner as it can be made in about 30 minutes. That said – you can definitely make this ahead of time.

Can this Taco Soup be made in the crock pot?

Yes! We recommend browning the meat & veggies and then just add everything into the slow cooker. Cook on low for four hours.

Can Taco Soup be frozen?

Yes – most definitely! When I make this simple soup recipe – I may not want to eat it for 2 weeks – so I always freeze some. I stocked up on theseglass food storage containersand love them! They’re great for the freezer and don’t stain when you reheat in them like the old plastic ones.

How many points are in this Weight Watchers soup recipe?

This easy recipe is 3 ww freestyle points per slice on the green plan and 2 Weight Watchers points on the blue and purple plans. Plans change so you’ll need to check the latest but there’s a lot of zero point foods in the ingredients!

How do you reheat leftover taco soup

If serving 1, reheat in the microwave for 1-2 minutes.If serving multiple, use a saucepan on the stove top to reheat.

Ingredients

  • 3/4 lb extra lean ground turkey breast
  • 1/3 cup bell pepper diced
  • 1/2 small onion diced
  • 14.5 oz Kroger Diced salsa style fire roasted tomatoes
  • 4 tsp Old El Paso Taco Seasoning
  • 1 cup frozen corn kernels
  • 2 oz Ortega mild diced green chiles
  • 1/2 packet Hidden Valley Ranch seasoning mix
  • 1/2 can Bush's Best Mixed Chili/Kidney/Pinto Beans, mild chili sauce
  • 4 tbsp Plain Fat Free Greek yogurt
  • 1/2 cup Kroger Santa Fe Style tortilla chips
  • 1/4 cup diced green onions
  • 1 1/4 cups water

Instructions

  • In a stock pot, or pasta pot (high sides), heat to medium high and add 1/4 cup water, ground turkey, onion and bell pepper

    1 1/4 cups water

  • Place lid on pot and simmer for 15-20 minutes

Notes

  • The green chiles made it pretty spicy – and I only used 1/2 can. If you dont like spicy – leave them out.
  • No need to add oil to the pan for browning the turkey – just a little water does the trick!
