  • Boneless, skinless chicken breasts - you can use fresh or frozen chicken breasts for this recipe, however, make sure you safely thaw the chicken beforehand.
  • Dried dill, basil, oregano, garlic powder, paprika, chili powder, and kosher salt - these are the dried herbs and spices you will need to create the herb mixture for the crust of the chicken. You are welcome to swap out some of the dried herbs with fresh herbs as well. This combination of herbs makes for a flavorful dish!
  • Olive oil or nonstick spray - if you cook the boneless chicken breasts on the skillet, use some extra virgin olive oil to help prevent any sticking. You can also brush the chicken with a little bit of oil to help the herbs stick better if needed. If you are cooking the chicken on the grill, you can use non-stick cooking spray.
  • Lemon - you will cut the lemon in half and put it in the pan or on the grill while the chicken cooks to make a caramelized lemon. Then squeeze a little lemon juice right on top of the chicken for some extra flavor—the best part!

Begin by cutting each chicken breast in half lengthwise (similar to butterflying, but cutting all the way through so you have two pieces with equal thickness). Place each piece of chicken on a parchment-lined baking sheet. Pat dry with a paper towel if needed.

In a small bowl, combine all of the spices and mix together until well combined.

Once combined, liberally coat each side of the chicken breasts with the spices. Note that you can brush or lightly spray the chicken with oil to help the spices stick if needed.

If cooking with a skillet on the stove: Note that you will need to cook the chicken in two batches. Heat 1 tbsp of the olive oil in a large skillet on medium-high heat. Place one of the lemon halves cut-side down in the skillet to caramelize the lemon.

When the oil is hot, place half of the chicken pieces into the skillet. Cook both sides of the chicken for about 5 minutes, until the chicken is browned and crispy and the internal temperature reaches 165 degrees Fahrenheit. If the chicken is browned but not yet at temperature, you can reduce the heat to medium to continue cooking the chicken, but prevent burning of the crust. Repeat with the second batch of chicken. Serve with a squeeze of the sauteed lemon.

  • Cutting the chicken breasts in half lengthwise will help to even out the thickness of your chicken breasts and allow the chicken to cook more evenly. You can also pound it with a meat mallet to create more tender chicken breasts.
