Not only are these fritters healthy but the green colour makes them perfect to serve on St Patrick's Day. They are made in the oven rather than being fried. Try to eat them before the kids do!

Ingredients

400 gBroccoli (Main)
3Eggs (Main)
2 cupsBaby spinach, coarsely chopped, lightly packed
1 ½ cupsCheddar cheese, grated, I used Tasty cheese (Main)
1 cupFresh breadcrumbs
1 pinchDried thyme

Directions

  1. Preheat the oven to 190°C. Line a baking tray with baking paper.
  2. Cut the broccoli into small florets. Blanch quickly in boiling water until crisp-tender. Drain and pat dry. Place the eggs in a bowl and whisk, until combined. Add the broccoli, spinach, cheese, breadcrumbs and seasonings. Mix well.
  3. Take ⅓ cup measures of the mixture and form into small patties. Place on the baking paper. Bake for 15-20 minutes, turning after 5 minutes.
