  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup all-purpose flour
  • 2 eggs
  • 1 tablespoon water
  • 1 cup Italian-seasoned panko bread crumbs
  • cup Parmesan cheese grated
  • 4-8 slices Swiss cheese (use the larger number if sliced thin or if you want a little more cheesiness)
  • 4-8 slices deli sliced ham (use the larger amount if sliced thin or if you like it meatier)
  • cooking spray such as avocado oil or olive oil

Instructions

  • Cut chicken breasts in half horizontally.

  • Place the chicken breasts in a resealable plastic bag and pound lightly until about ¼"-½" thick.

  • Season each chicken breast with salt and pepper.

  • Working with one chicken breast at a time, place it on a cutting board or other flat surface. Lay 1-2 slices of ham on top followed by 1-2 slices of cheese.

  • Starting on one end, roll the chicken breast up as tightly as you can and secure it with a toothpick. Repeat with remaining chicken breasts.

  • To prepare it for air frying, make an assembly line out of the remaining ingredients.

  • Place the flour in a wide-mouthed bowl. Next to it, whisk the eggs with 1 tablespoon of water in another wide-mouthed bowl. Finally, mix the panko crumbs with the grated Parmesan in a wide-mouthed bowl or flat plate.

  • Dredge each stuffed chicken breast in the flour, then dip into the egg mixture, and finally coat with the panko-cheese mixture.

  • Preheat the air fryer to 380°F.

  • Once preheated, spray the basket with oil. Place the stuffed chicken breasts into the basket with space between them, making sure not to overcrowd so they cook evenly.

  • Air fry for 10 minutes, turn, spray with oil again, then air fry for another 8 minutes.

  • Test with a digital thermometer to make sure they are cooked through. It should read 165°F when done.
