How to make a vegetable charcuterie board

  1. Placea bowl of dip off to one side on a largeboard. I like using this Big Board from the Reluctant Entertainer so there’s room for lotsof goodies!
  2. Layerleaves of radicchio around the platter,then fill in the spaces with the vegetables.
  3. Adddips and any other goodies you might want to theboard, then serve!

Tips to make the best vegetable charcuterieplatter

  • Usewhat’s inseasonand look for vibrant, rich colors.
  • Servebaguette slices, or pita wedges or chips on the side for those whowant something a bit moresubstantial.
  • Includeat least4 different kinds of veggies.
  • Include a dip– or if your platter is really big, 3dips.
  • If you wish, youcanblanchthe veggies first by dunking them in boiling water for 1minute and then chill them inice water to make them more vibrant.
  • Don’tcut the veggies more than2 hoursahead of time to keep them freshand crisp.
  • Becreative, and don’t be afraid to put it on the board!
