With the fall season comes an endless supply of fresh pumpkins. Many use them for so many things but often toss out the seeds. No need to toss them out when you have things like this salt and pepper pumpkin seed recipe that you can make!

While the Paleo diet says to limit salt intake, it does allow you to have sea saltin moderation. So this is a Paleo-friendlysnack idea as long as you are not eatingtons of them. Or if you want to skip putting salt on them, you could do that and just have pepper roasted pumpkin seeds.

So the next time you are using fresh pumpkin to make things like Fresh Pumpkin Puree or Instant Pot Pumpkin Butter make sure you save the seeds and set them aside.

How To Make Salt & Pepper Roasted Pumpkin Seeds:

The first thing you need to do is cut a hole in the pumpkin. I normally just cute right around the stem area. After you have yourhole, start scooping out all the seeds. Place them in a bowl.

Next, remove as much of the pumpkin string and meat from the seeds by hand. As you clean the seeds place the clean ones into a colander.

Now you want to rinse the colanderfull of seeds under some water to get off remaining parts of pumpkin. Let them sit in the colander for a few minutes to drip off the water.

Place a siliconebaking mat on a cookie sheet and then dump the clean seeds onto the mat. You could also put them on a dish towelat this step too if you wanted too. Spread them out so they are not in a pile. Allow to air dry for about five hours.

After they have dried for five hours (give or take is fine you just want them to be mostly dry from water) put them in a mixing bowl with oil, salt, and pepper and mix well.

Now place them back onto the baking mat. Place in a preheatedoven of 250 degrees on the center rack. Cook for about 30 – 45 minutes until cooked to the brownness you like. I did mine for 45 min as I like the more golden taste. You do want to flip them over about halfway through.

Ingredients

  • Seeds From Pie Pumpkincause others just will need to add little extra oil and spices
  • 2TbspAvocado Oil
  • 1/2TbspSea Salt
  • 1/8 Tsp Black Pepper

Instructions

  1. Cut a hole in the pumpkin and remove the seeds.

  2. Remove as much of the pumpkin string and meat from the seeds by hand.

  3. Rinse seeds in a colander under some water to get off remaining parts of pumpkin.

  4. Place seeds on baking mat or towel and make sure they are spread out. Allow to dry for five hours.

  5. Put seeds in a mixing bowl with oil, salt, and pepper and mix well.

  6. Preheat oven of 250 degrees.

  7. Put them on a silicone baking mat on a cookie sheet making sure they are spread out.

  8. Put on center rack in the oven and cook for about 30 – 45 minutes until cooked to the brownness you like. Flipping the seeds halfway through.

  9. Allow to cool and then store in an airtight container
