When you’re in the mood for some good ole fashion Italian comfort food but not the 20 step laborious process of making lasagna. This is quick, easy to put together and so yummy!! I’ve personally been making this one for years and kids ask for it by name.

One Pot Lasagna Soup - Hungry Happens (2)

You musn’t skip the ricotta cheese topping, it really sends this soup over the top and makes it spoon lickin’ good. I add sugar to most of my tomato sauce recipes to stomp out the bitterness. You can omit it if you like. Or just taste your sauce as your cooking and adjust accordingly.

Thank you for swinging by Hungry Happens! If you create this dish or any other from our site, we would greatly appreciate you taking the time to comment and rate the recipe! LOVE YOUR LIFE!

Servings: 6

Prep Time: 5 minutes mins

Cook Time: 30 minutes mins

Total Time: 35 minutes mins

Ingredients

  • 1 tbs olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 lb sweet Italian sausage, casings removed
  • 4 cups chicken broth
  • 28 oz crushed tomato can
  • 2 tbs tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • 2-3 tbs sugar (optional)
  • salt and pepper to taste
  • 9 lasagna noodles, cracked into medium pieces
  • 1/4 cup heavy cream

Ricotta Scoop Topping:

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/3 cup parmesan cheese, grated
  • 3 tbs fresh basil, chopped

Instructions

  • In a large pot, heat oil on medium high. Add the onion and cook for a few minutes. Add the garlic and stir for 30 seconds. Add the sausage and using a wooden spoon, break up the meat until no longer pink – about 5 minutes. Drain the fat from the pot as desired.

  • Add the broth, tomatoes, tomato paste, seasonings, salt & pepper to taste and sugar, stir to combine. Bring to a boil and then reduce heat to simmer and cook for 10 minutes, POT COVERED. Taste the soup and adjust the salt or any seasonings necessary.

  • Next, add the lasagna pieces into the pot, stir and cover. Cook another 10 minutes or until pasta is cooked al dente. Once the pasta is cooked, stir in the heavy cream.

  • In a medium bowl, combine the ricotta, mozzarella, parmesan, basil and salt and pepper to taste. Serve soup with a scoop of this mixture and chili pepper flakes.

Hi! I’m doing two pots myself right now..one with pork sausage and one with Beyond “sausage” (should be in the meat case with the other Impossible or Beyond products. My local Walmart carries it).

This is one of our favorite soups! My husband is NOT a fan of soup, at least he has told me several times. But this he has asked me for at least 6 times now! I love that it’s so easy! I love that it’s filling! Best part is the cheese scoop on top! I could eat that alone and be a happy girl! My picky eater 10 year old even loves this soup… and he won’t touch spaghetti 🤣

Hi I Made Your One Pot Lasagna Soup And It Was Amazing!! I Switched Out The Italian Sausage For Impossible Sausage And The Chicken Broth For Vegetable Broth To Make It Vegetarian, Because I Can’t Digest Any Meats, But I Am Not A Vegan! My Husband And I Loved This Recipe!!
I Regularly Switch Out The Meats In Recipes For Either Morningstar Farms Or Gardein Or Impossible Or Beyond Meatless Choices!! I Have Never Had A Problem With Taste Because These Replacement Choices All Taste Great Alone Too!! Thanks Again Stella For Another Great Recipe!!!

FAQs

How to make lasagna thicker? ›

Cornstarch is cheap and widely available at most grocery stores with the flours and baking products. To use cornstarch as a thickening agent for lasagna sauce, add it in a slurry to the sauce as it simmers. A slurry consists of equal parts cornstarch and cold liquid.

How to stiffen up lasagna? ›

You could also use a roux, a cooked mixture of starch and fat (usually flour and butter). It's a highly popular and equally effective thickening agent. To make a roux, melt butter in a pan, add flour, and whisk until it forms a thick golden brown paste. Add it to your tomato sauce and whisk well to prevent clumping.

What makes lasagna soupy? ›

Watery tomatoes aren't the only culprit for soupy lasagna: Oils from cheese and meat and water from lasagna noodles and vegetables can affect your lasagna's consistency. Draining excess fat from ground beef or sausage before adding it to tomato sauce is imperative to maintain a thick sauce.

Why is my lasagna so soupy? ›

The sauce could be too watery. The noodles can be holding on to water. The vegetables are releasing excess moisture. If you are using ricotta be careful of the moisture it can add.

How to stop lasagne from being sloppy? ›

How can I keep lasagna from being a mushy mess? The best way is to keep your ingredients dry. Cook your pasta sauce long enough to boil out most of the moisture so the sauce is thick.

How do I stop my lasagna from being runny? ›

If you still find the end product runny, reduce the amount of condiment in the lasagna. If the sauce is to wet. I add some dry fine ground cheese to absorb the extra water in the sauce. Cheaper sauces seem to be more water.

What can I add to my lasagna to make it taste better? ›

Sugar: Two tablespoons of white sugar add subtle sweetness and enhance the flavor of the sauce. Spices and seasonings: This lasagna recipe is flavored with fresh parsley, dried basil leaves, salt, Italian seasoning, fennel seeds, and black pepper. Lasagna noodles: Use store-bought or homemade lasagna noodles.

What to do if lasagna is too watery? ›

Mistake number 3: the sauce is too runny

If it is, don't worry, just let it reduce on the stove for around twenty minutes. Trust me, lasagna “boiled” in sauce just isn't the same. The key is to have a nice, thick sauce that won't seep too much into the pasta, but rather, get absorbed into it, making it more flavorful.

What keeps lasagna from falling apart? ›

A thin sauce runs right off of cooked lasagna noodles, causing all the layers to slide off of each other, as well. A thick sauce, meanwhile, almost acts like a glue that holds the layers together, resulting in a dish that slices into neat squares.

Can you put too much sauce in lasagna? ›

The number one reason lasagna turns out soupy is, quite simply, too much sauce.

How do you reduce the sauce in lasagna? ›

If you are finding the lasagne sheets too soft then you may want to try reducing the amount of liquid in the meat sauce slightly. You can either reduce the amout of beef stock or broth used, or simmer the sauce after cooking in the oven to reduce it.
