Chili is a staple in this household during the cold winter months. It is simple, affordable, comforting, filling and of course, tasty. Some of you might be questioning, ‘why chili and rice together?‘ Well, because it tastes good and you can stretch the meal to feed a lot of people AND have some leftovers to reheat for lunches. Do you have to put the chili over rice? No, if you are trying to reduce carbs you can just eat the chili.

What I love about this Loaded Turkey Chili Over Rice is it offers a rainbow of ingredients that you can taste. You taste the corn, the fresh bell peppers, onion, tomatoes and meat… all of it. I am all about keeping meals simple. After you have browned the ground turkey with chopped onion, just dump everything in that slow cooker and dinner is ready when you get home from work.

Ways to Cook

Pressure Cooker

Sautee the ground turkey with a sprinkle of ground pepper, add onion, garlic and bell peppers. Stir. Add the rest of the ingredients. With the pressure cooker, you want to add a little more liquid so add in 1 and a half cups of tomato sauce, beer or beef broth to the ingredients listed in the recipe card. Adjust the pressure cooker timer to 20 minutes on high, close the lid and let cook. Depressurize and then serve over steamed rice with your favorite toppings.

Stove Top

Sautee the ground turkey with a sprinkle of ground pepper, add onion, garlic and bell peppers. Stir. Add the rest of the ingredients. Like the pressure cooker, you want to add a little more liquid so add in 1 and a half cups of tomato sauce, beer or beef broth to the ingredients listed in the recipe card. Let simmer for 30 minutes and then serve over steamed rice with your favorite toppings.

Crockpot

Instructions below in the recipe card! Notice that the Pressure Cooker and Stove Top instructions add a cup of liquid. You don’t need that extra liquid when cooking the slow cooker. The chili will seem too thick at first but as the ingredients cook all day, the onion and bell peppers release a lot of liquid to leave you with just the right amount for the hearty chili we are going for today. Of course, you can always add in a little liquid if you please. A little ale never hurt a chili recipe.

Ingredients

Scale

  • Rice, steamed
  • 1 1/2 pounds lean ground turkey
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 packet chili seasoning
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, finely diced
  • 15 ounce can kernel corn, drained
  • 14 ounce can diced tomatoes
  • 28 ounce can crushed tomatoes
  • 2 x 16 ounce can kidney beans (can swap with chili beans or black beans)
  • olive oil
  • ground pepper
  • salt

Instructions

  1. Brown the ground turkey on the stove-top with some olive oil and season with salt and pepper. Place into crock-pot.
  2. Drain the beans and corn. Add to crock-pot.
  3. Add can of crushed tomatoes and diced. Do not drain.
  4. Chop the onion and bell peppers. Add to crock-pot.
  5. Finely chop the jalapeno and mince the garlic. Add to crock-pot.
  6. Add in envelope chili seasoning.
  7. Stir ingredients together and cook on low for at least 5 hours.
  8. Cook the rice according to package instructions as the chili is finishing up.
  9. Serve chili over steamed rice with toppings of choice.

Toppings

I think that the toppings can really make the chili. I sprinkled some crushed red pepper over top with some fresh jalapeno slices, a dollop of sour cream and some fresh avocado today. Some corn chips were added as I ate for some extra crunch and texture.

    I am a chili fan but not bell peppers. I wish I liked them. I haven’t ever thought to add rice to mine. I always do Fritos. May be a southern thing.
