What is Bruschetta?

Bruschetta is an Italian appetizer that typically consists of grilled or toasted bread rubbed with garlic, drizzled with olive oil, and topped with diced tomatoes, fresh basil, and sometimes other ingredients like balsamic vinegar or mozzarella cheese.

It is a delicious and versatile dish that can be served as a starter, snack, or part of an antipasto platter. Our bruschetta recipe is a unique spin on the classic but also a quicker version that can be made in mere minutes.

So we’ve skipped some steps and traditional ingredients. But it’s still a crowd-pleaser andperfect for impromptu gatherings or when you need a delicious appetizer in no time.

Ingredients Needed

Brioche toast slices or petite toasts —Our favorite toast slices and where we purchased ours are from Trader Joe’s. You can prepare your own toasted bread but for the sake of saving time, toast slices are a quick option for when you’re in a bind.

Crumbled or shredded cheese of your choice

Diced fresh avocado

White truffle oil — Or go the traditional route with extra virgin olive oil or balsamic vinegar.

Bruschetta sauce

Tomatoes — Core and dice tomatoes. Drain any excess juice and transfer tomatoes to a medium bowl. Fresh is best since it’s the star ingredient. We prefer Roma tomatoes because they have few seeds and are smaller, so less watery. Tomaotes are at its peak prime in July but still tasty year-round

How to Make Easy Bruschetta

1 — Optional: In medium skillet with oil over medium heat, warm the diced tomatoes. This is optional but a quick step that will release the aromatic flavors of the tomatoes.

2 – Drizzle a bit of white truffle oil on each slice.

3 – Spoon tomatoes on top.

4 – Sprinkle on the diced avocado, cheese and top with bruschetta sauce.

Recipe Notes and Tips

Customize the toppings based on your preferences:

Popular cheese choices include crumbled goat cheese or feta and shredded parmesan cheese. Other topping ideas include thinly chopped basil leaves, minced garlic, mushrooms, diced peppers and more.

Things to do with leftover bruschetta toppings:

Mix the leftover ingredients together to create a tomato bruschetta mixture that is perfect on grilled or baked chicken or fish. Stuffed in mushrooms. Topped on eggs or tossed in pasta like Cacio e Pepe.

To make your own toast bread:

We used pre-made toast slices to save time in the kitchen. However, if you have time, then make your own toast. Diagonally cut the baguette or bread of choice into 1/2” thick slices. Place on a baking sheet and back in the oven until they are golden brown and crispy. Rubbing the bread with garlic cloves after toasting adds a subtle garlic flavor.

Marinating and heating up the tomatoes:

You do not have to heat up your diced tomatoes, but we highly recommend it to release its flavors. You can also heat up the tomatoes with some garlic for that extra zest. Make sure your tomato mixture has cooled before placing it on the toast so that the bread does not get soggy.

How long does fresh bruschetta keep?

Store the toppings in an airtight container for up to 3-4 days in the refrigerator. If you’ve already topped the toast, bruschetta ideally should be consumed that day.
