Ready for the quick little bite that is both healthy and tasty? Bacon wrapped green beans are it! Green bean bundles wrapped in bacon brown sugar are a little crunchy, a little salty, and a little sweet – they’ve got everything going for them. When you get tired of plain roasted green beans (which are still totally delicious!) or just want them in appetizer form, make these fun bundles of green beans with bacon instead. They also make a great side dish for mains like filet mignon, a tender baked pork chop, or sirloin steak.

How To Make Bacon Wrapped Green Beans

You’ll love how simple this recipe for fresh green beans wrapped in bacon is:

  • Cook bacon. Place bacon slices in a single layer on a rack over a baking sheet. Bake until cooked through, but not crispy. (This is the same as my method for bacon in the oven, but we take it out early so that we can roll it.)

  • Cook green beans. The easiest way is to boil them until crisp-tender, then immediately run under ice cold water to stop the cooking process.

TIP: They should be a little under-done. The green beans will cook again in the oven later, so don’t overcook them at this step.

  • Season. Pour bacon fat over the green beans, and season with garlic powder and black pepper. Toss to coat evenly and add more salt to taste if you like.

  • Assemble bacon wrapped string beans. Take 6-7 green beans and wrap them in a bacon slice, securing with a toothpick and place onto prepared baking sheet.

  • Top with Besti Brown. Sprinkle Besti Brown over each bundle, and pat to help it stick.

  • Roast. Roast the bacon green beans until the bacon is crispy and green beans are tender.

TIP: If you want the bacon crispier, simply place under the broiler. Watch closely, it will only take a minute or two.

FAQs About Green Bean Bundles

Can you use real brown sugar or a different sweetener?

I used Besti Brown Sugar Substitute in this recipe as a natural brown sugar replacement without the sugar. If you’re not low carb, feel free to use regular brown sugar.

Other low carb sweeteners won’t work as well, because they don’t have the same flavor and clumping properties of brown sugar.

You can get Besti Brown here, but can also simply omit it if you don’t want the brown flavor and sweetness.

If you do decide to get it, know that you can use it to make other things “candied”, such as candied carrots if you’re just reducing sugar.

Can you make bacon wrapped green beans on the grill?

Yes, you can. Follow the same steps for this easy bacon wrapped green bean recipe, and at the end, place the bundles on the grill instead of in the oven.

Storage Instructions For Green Beans With Bacon

Can you make them ahead?

Yes, you can. Simply reheat in the oven when you’re ready to serve. Alternatively, you can pre-cook the green beans ahead, then assemble and bake when you’re ready to serve them.

How to store fresh green bean bundles wrapped in bacon:

Store the bundles in the refrigerator for 3-5 days.

Can you freeze them?

Yes, you can. The best way would be to prepare the bundles, but don’t finish the last baking step – freeze with the green beans blanched but the bacon raw.

When ready to cook, you can roast them straight from frozen. Just be aware that green beans that have been frozen will be softer than fresh ones.

How to reheat green beans wrapped in bacon and brown sugar:

Reheat your bundles in a 350 degree F oven, until heated through. If your bacon is not as crisp as you’d like, you can broil at the end.

Microwaving is not recommended, as the bacon will be soggy.

  1. Preheat the oven to 400 degrees F (204 degrees C). Place an oven-safe rack over a baking sheet.

  2. Arrange the halved bacon slices in a single layer on the rack. Bake in the oven for about 10-15 minutes, until cooked through but not crispy.

  3. Meanwhile, place the beans in a large saucepan and cover with water. Bring to a boil, then simmer for 3-5 minutes, until crisp-tender but not quite done.

  4. Drain the beans into a colander over the sink and run ice cold water over them, to stop them from cooking further. Pat dry very well. Place the green beans into a large bowl.

  5. Pour the bacon drippings from the pan over the bowl of green beans. Sprinkle with garlic powder and black pepper. Toss to coat. The bacon drippings already add salt, but if desired, you can add more salt to taste.

  6. Lightly wipe down the baking sheet with a paper towel. Take 6-7 green beans and wrap in a bacon slice, secure with a toothpick, and place onto the baking sheet. Arrange all the bundles on the baking sheet, without touching each other.

  7. Sprinkle Besti Brown over the green bean bundles, about 3/4 teaspoon per bundle.

  8. Bake green bean bundles in the oven for 10-15 minutes, until bacon is crispy and green beans are tender.

  9. If you want the bacon even more crispy, place under the broiler for 2-3 minutes at the end.
