Apple Fritters Recipe (2)

As I was peeling my Granny Smith apples to make these, I told my son Sam how I enjoyed watching my Great Granddaddy Joe peel apples when I was a little girl. He and my Great Grandmother would have just picked the apples he was about to peel. With his pocket knife in hand, he’d begin to peel. He’d always ask if we thought he could peel the apple in one long ring. It was always a treat to watch him in anticipation, knowing he’d never missed this trick in all the other times we’d watched him. The perfect, bouncy ring of apple peeling always seemed magical to my young eyes.

As I finished telling Sammy story, I passed him the nearly complete ring I’d peeled from our Granny Smith apples. I laughed and told him, “I should have watched Granddaddy Joe one more time to make sure I could do it every time, shouldn’t I?”

FAQs

What is an apple fritter made of? ›

Here's what you need: apples, flour, cinnamon, sugar, whole milk, butter, baking powder, salt, vanilla, and eggs. Before you begin, add a couple of inches of canola oil to a pot or dutch oven, and heat it over medium to medium-low heat.

Why are my homemade apple fritters soggy? ›

Why are my apple fritters soggy? This is most likely the result of oil temperature. If your oil is too cool, your fritters will take a long time to fry and will end up greasy.

Why are my apple fritters not crispy? ›

Best tips for apple fritters:

Use two spoons to drop the batter into the oil and spread gently. If you drop a scoop of batter into the oil, the outside will be crispy and the center will be raw. To make them really crispy, I prefer to fry them until they are dark brown not just golden brown.

How can I thicken my fritter batter? ›

Adding flour to a wetter batter will give you the thick consistency you want. Add crumbled stock cubes for a flavourful kick! Add as little or as much as you like (or none at all), depending on the flavour you want.

What makes it a fritter? ›

A fritter is a portion of meat, seafood, fruit, vegetables, or other ingredients which have been battered or breaded, or just a portion of dough without further ingredients, that is deep-fried.

Does baking soda make fritters crispy? ›

Is baking soda or powder best for frying? A pinch of baking soda can help produce crispy fried foods. It reacts with the acid in the batter to create carbon dioxide bubbles. These lead to an airy batter and a crisper, fluffier result.

What does baking soda do in fritters? ›

So we use both to get the best of both worlds; Baking soda (bi-carb) OR baking powder – just a touch, to aerate the batter every so slightly (without it, it's slightly denser); Parmesan – for a good hit of savoury flavour AND to make the fritters extra crispy! Green onion and coriander – for a hit of freshness.

How unhealthy are apple fritters? ›

Apple Fritter

Apple fritters are among the unhealthiest doughnuts. Just because a doughnut has fruit it it doesn't mean it is a good choice. Apple fritters are deep fried in fat. A medium sized apple fritter contains approximately 17 grams of fat (almost half the fat from saturated fat) and 450 calories.

Why are my apple fritters falling apart? ›

Sprinkle it with more flour on top and use your hands to squeeze and pat into a patty. All the extra flour is really important because it will help bind and seal the fritter so it doesn't fall apart when frying.

Can you shallow fry fritters? ›

While baking the fritters may seem like a more wholesome choice, I encourage you to fry them. Frying ensures you'll get that extra-crispy exterior, which is the sign of a great fritter. Plus, these are shallow-fried, rather than deep-fried, in just a couple of tablespoons of oil.

How do you keep fritters from falling apart? ›

Get the skillet searing hot.

A hot skillet will start cooking the fritters as soon as they hit the pan. That helps sear a crust on each fritter that will hold them together. A pan that's too cool will create a lackluster crust that could result in a floppy fritter if you're not careful.

What is the purpose of the egg in fritters? ›

Alternatively, don't use them at all. The eggs are there with the flour to bind the fritters together, and to make the fritters rise a little, but they're not absolutely necessary where cheese will melt and act as binding.

Why are my apple fritters greasy? ›

The oil temperature is important!

I like to cook my Bourbon Apple Fritters at about 350°. If the oil is too hot, the outside will burn and the inside will be under-cooked. If the oil is not hot enough, the fritters will absorb a lot of oil and will be greasy.

What consistency should fritter batter be? ›

As batters go, fritter batter is far to the simplistic side of the spectrum: merely 1 part flour, 1/2 part milk, and 1/2 part egg, mixing up to a relatively thick consistency.

Is apple fritter a donut or pastry? ›

While Apple Fritters aren't your typical cake or yeasted donut, they are certainly donuts! I use a yeasted donut dough, fill it with cooked and sweetened cinnamon apples, form it into fritters and give them a quick fry in my dutch oven on the stove. Finish it off with a quick powdered sugar-vanilla glaze and voila!

Are apple fritters healthier than donuts? ›

Apple Fritter

Is an apple fritter a bear claw? ›

There are actually quite a few differences between a bear claw and an apple fritter. Apple fritters have a very different taste and texture than a bear claw. They have a dough mixed with apples and cinnamon and then deep fried. Bear Claws have a very distinct shape and are usually oven baked.

What kind of high is apple fritter? ›

According to Leafly reviewers, Apple Fritter's effects include feeling relaxed, giggly, and tingly. It's a great hybrid, combining the stone of GSC with the energy of a diesel. Apple Fritter cannabis has a flavor and aroma that come off as sweet and earthy, with a light, cheesy, apple pastry influence.
